Spring Into Yum!


Spring has officially sprung! I always look forward to my favorite time of year. Spring always brings the flowers back to bloom, the birds back to my feeders and new recipes to my kitchen.

After struggling with trying to maintain a healthy diet for most of my adult life, I finally decided to just enjoy what I enjoy. I’ve never been one to keep up with restrictive diets, hitting the gym 5 times a week or cutting out my favorite munchies just to fit into that summertime bathing suit. But I have found a regimen that works for me. Mainly consisting of portion control, I just find what I like, and eat it! Sounds perfect right? I’ve learned that as I steadily climb the ladder to my 40th birthday, I just need to exercise the self control that I am constantly begging my kids to use. So what works for me is simple; eat what I want, when I want it....in small portions.

This Spring I have come across several quick and fairly easy recipes. Always on the go and seemingly rushed every minute of every day of my life, I look for tasty recipes with little ingredients, and lots of flavor. Here are a few of my most recent finds that I consume almost daily.

Pineapple Green Juice
Requires juicer
1 bundle spinach (substitute kale, romaine-any leafy green)
2 pears (substitute sweet apples)
1 half pineapple (substitute kiwi, mango)

Wash all ingredients and run through the juicer. Serve chilled for best taste.

Juicing can be done ahead of time. We make large batches on Sundays and then pour a large to-go cup each morning to have on the way to work. You’d be surprised how quickly you can down an entire pineapple, 2 pears and a half bag of kale. That’s more veggies and fruit than I would normally have in an entire week and it keeps me full until lunch time.

Green drinks aren’t pretty right? I have learned, after only 2 months of juicing, that once you find the right combination of fruits and vegetables, there ARE great tasting juices out there that will provide you with more nutrients and vitamins than you would likely consume if you ate a plate full of veggies for dinner. There are great websites, books and tools out there to help you get started. My favorite at the moment, is Best For Juicing. Daily posts include recipes, how to’s, support from other juicers. It’s a great tool, check them out.

Tuna Pepper
1 large red, yellow or orange pepper
1 can albacore tuna in water, drained
1 tsp Mayo
½ tsp Relish
Salt and pepper to taste

I mix the tuna up with mayo and relish. I pack it in my lunch with a bottle of water and a pepper. After splitting open the pepper and removing seeds, I spoon in the tuna and eat with a knife and fork. Believe it or not it fills me up when I add a bottle of water and a banana. Quickest lunch ever. Now if only I could get my kids to eat it....

Grilled Fish
This is a big one for me. Having a severe allergy to shellfish for most of my life, I have always shied away from all seafood. But one Saturday night, 2 glasses of wine and the smell of lemon and garlic changed my mind.

After my husband marinated, seasoned and grilled 5 pieces of mahi mahi, it looked too good to not try a small bite. That small bite turned into 2 pieces of fish quickly disappearing from my plate and a trip to Trader Joe's the next day to buy more mahi mahi.

With zero “fishy taste”, a soft texture similar to chicken and the great flavors of lemon and garlic mixed with the smokiness of being cooked on the grill on a wooden salmon plank, this has become my new favorite dinner. 20 minutes on the grill while some green veggies steam in the microwave and a couple pieces of garlic Texas toast (like I said; I eat what I like, in moderation) and this is one quick and easy weeknight recipe that I will continue to fall back on. All you non-seafood eaters should too!

Celebrate with Punch!


Technically, the holiday season is over, but we still find ourselves celebrating with our favorite girlfriends.  The holiday season is so busy with family visits, traveling, and work parties, that we usually end up extending the season with our friends.

So whatever you are celebrating and whoever you are with, this former holiday punch that we’ve given a new name is great for all occasions.

Celebratory Punch Recipe

Makes 14 Servings
Prep Time: 5 minutes
Ingredients:
1—750ml bottle of Martini Moscato d’Asti (or your preferred Moscato)
1—2-liter bottle of ginger ale, chilled
2—10-oz packages of frozen strawberries, partially thawed

Directions:
In a large punch bowl, combine Moscato, ginger ale, and strawberries.  Gently stir and serve in your glass of choice.
Per Serving:
102 calories
18 grams carbohydrates
Zero cholesterol
Zero fat
Zero protein
10mg sodium

Make them THINK you can cook!


Girls let’s just face it, I’m not a cook. I would like to be, but being that my husband and I both get home from work at the same time and he’s hungry the instant he’s home…I have to find ways to be creative other than having left-overs every night.  That’s where the crock-pot comes in. I prepare in the morning before I go to work or sometimes I do all the prep work the night before and refrigerate it. In the morning I plug it in and go!  I have made so many things from breakfast casseroles, hams, desserts, drinks, all sorts of things in the crockpot. Here’s my family’s favorite crock-pot meal.  I usually have a salad and some corn bread to go with it. ENJOY! 

Crock Pot White Chicken Chili

Ingredients

1 1/4 lbs boneless skinless chicken
2 (15 ounce) cans great northern beans or navy beans
1 (15 ounce) can hominy or white corn
1 (1 1/4 ounce) envelope taco seasoning
1 (4 1/2 ounce) can of chopped green chilies
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (14 ounce) can chicken broth
1/2 cup sour cream
chopped green onion (optional)
monterey jack cheese (optional)

Directions:
Place chicken in slow cooker and top with beans and corn. In a medium bowl, combine taco seasoning, chiles, condensed soup, and chicken broth. Pour over top of ingredients in the crock pot. Cover and cook on low for 8 to 10 hours.
Before serving, stir gently to break up chicken, then stir in the sour cream.
Serve topped with green onions and jack cheese, if desired.

Shantell’s Weight Loss Chronicles: Yummy Chicken Veggie Soup

This year, like so many of you and like so many years before, I resolved to lose weight BUT this time around instead of doing the latest, greatest fad diet I decided to consult a dietician who helped me create a balanced, healthy eating plan. But with a schedule that includes a full time job, two businesses, a LBDC chapter to lead, and a dissertation to write I quickly came to the realization that making sure I get all of the required portions/nutrients/good stuff in one meal is a CHALLENGE. Per my dietician’s advice dinner should include 6oz of protein, ½ cup of starch, and unlimited veggies. So I’ve decided to sweep the dust off the crock pot and make meals that meet all of my dietician’s requirements in one convenient pot.  

Here’s my yummy chicken veggie soup recipe (Disclaimer: the measurements are approximate. I’m a “season to your taste” type of cook so feel free to adjust to your taste). Feel free to use frozen or canned veggies.

What you need:
4-6oz chicken breast
2 tbsp. of olive oil
1 tbsp. of black pepper
1 tbsp. of garlic powder
1 tbsp. of seasoning salt
2 tbsp. of parsley flakes
2 cups (or 16 oz.) of whole kernel sweet yellow corn
2 cups (or 16 oz.) of cut green beans (I prefer fresh cut over French cut)
1 cup (or 8 oz.) of sweet peas
1 cup (or 8 oz.) of sliced carrots
2 cups (or 16 oz.) of tomato sauce
1 cup (or 8 oz.) of water
½ cup (or 4 oz.) of tomato paste

What to do:
Warm olive oil in a large pan. Season chicken using a little of the seasoning salt, garlic powder, and black pepper.  Lightly  brown the chicken in the olive oil. Slice chicken into strips or chunks while it’s browning. WARNING: Do not let the chicken get crispy! Drain the oil from chicken.

In your slow cooker add the tomato sauce, remaining black pepper, garlic powder, seasoning salt, and parsley flakes. Add veggies and chicken. Add tomato paste and water. Stir.

I usually let this soup simmer all day but it’s actually ready to eat in about an hour, freezes well, and is very filling (i.e., no bread/rolls/crackers necessary). In one serving you have 6 oz. of protein, ½ cup or less of starch (carrots), and unlimited veggies! The perfect balanced meal.

Better Than Sex?

The Nashville chapter recently hosted a V.I.P. Pajama Brunch. The ladies gathered on a Saturday morning, in their finest pj’s, and shared brunch while discussing the upcoming year and planning out events for their chapter. 



All the ladies brought a side dish, a brunch item or a finger food. It was a great way to start the new year, have a few laughs, plan our event calendar as a group and get new recipes! One of the highlights of this event for me was, as they say, “better than sex.” Nashville Director Amy Campoli brought her version of this popular cake. While a quick Google search for “Better Than Sex Cake” can return many interesting results, this recipe is tried and true and has received the LBDC stamp of approval!

Ingredients
1 box of German Chocolate cake mix
1-14 oz can sweet condensed milk 
Caramel ice cream topping 
1-8oz container of Cool whip 
Handful of milk chocolate chips 

Directions
Prepare cake as directed. 
Allow to cool to room temperature. 
Poke holes in the cooled cake and gently pour sweetened condensed milk over the cake allowing it to run into the holes. 
Pour caramel over the cake. 
Top with whipped cream and sprinkle chocolate chips on top. 
Add more caramel to the top of whipped cream. 

The results....

Shot of S'mores, Anyone?

                      
We have posted a lot about fall during these last few weeks. But one thing we can not leave out is our favorite seasonal cocktail recipe! Everyone loves a good cocktail now and then. But wouldn’t it be even better if you could tailor your cocktail to the weather outside?

Fall reminds me of the leaves changing, hayrides and campfires, roasting marshmallows and of course, s’mores! Why not take this great seasonal tradition and turn it into a fun drink to share with your girlfriends on a cold Saturday night during a fun Girls Night In?

One of our Directors found this great recipe for s’mores shots in chocolate glasses. CHOCOLATE GLASSES? YUM! These are fun. These are chocolate. These are delicious!

Here’s what you’ll need:

10-12 ounces dark chocolate
Shot Glass Mold
2-3 tablespoons graham crumbs
4 ounces chocolate vodka
1 teaspoon vanilla
4 tablespoons non dairy whip
Shot glasses (make a day ahead): In medium saucepan, melt dark chocolate over medium heat. Spoon into shot mold, let cool. Place in refrigerator to set, preferably overnight. Makes four chocolate glasses.

Vanilla Whip: Stir vanilla into whip cream.

Pulse 2-3 graham crackers in food processor to a fine crumb (or use store bought crumbs), pour onto a flat plate. Wet the rim of each chocolate shot glass with water, roll in graham crumbs. Pour 1 ounce chocolate vodka into each shot glass, top with vanilla whip.

Sunday Soup

Perhaps I'm a bit late to the show; it certainly wouldn’t be the first time. But I have recently discovered the easiest, most delicious fall soup recipe.

Each year my company hosts a fundraiser in which all my normally respectable, nose to the grind, uptight co workers don their most creative and inventive costumes, share in a potluck, and raise money for our education foundation.  It was at this year's event that I first discovered, and fell in love with, Taco Soup.

While there were several soups and chilis lined up on the buffet, I kept going back to this spicy, warm, meaty soup. I guess I wasn’t the only one because as I was sneaking into the break room later in the day to have another bite or two, I realized that someone else had beat me to it.

Lazy Sundays are few and far between in my household. But today I found myself right in the middle of one. The mister was off to a Titans game, the kids were at a sleepover, and I was hungry. So a quick email to a fellow LBDC member asking for her recipe and a trip to the grocery store produced a bottle of wine and all the ingredients to make Taco Soup. This is the perfect “cold day out” recipe: it takes minutes to prepare it and toss it in the crock pot, and then while it warms you have time to enjoy the leaves falling while sipping on your favorite glass of wine.  By the time the family returned home late in the afternoon, dinner was ready, the house smelled wonderful, and my husband and kids were amazed at all my hard work. I’ll never speak to the contrary!

There are several versions of this recipe online. I’m sure you can pick and choose depending on preference, but here is the recipe that my good friend Amy shared with me.

Taco Soup
Ingredients
2 lbs of browned ground beef,drained
2 cans of cream style corn
2 cans of diced tomatoes
1 can of rotel
2 cans of light red kidney beans (drained)
1 packet of hidden valley ranch salad dressing
1 packet of taco seasoning

Directions
Put ground beef (or shredded chicken, smart ground or any type of meat) in bottom of crock pot.
Add all other ingredients one at a time
Stir together and cook on high for 2 hours or low for 4 hours.

Serving suggestions
Top with fritos, cheese, tortilla chips, sour cream
Also serves well if you add a spoonful to a bed of salad greens and eat with tortilla chips.

Don’t Break the Belt… Over the Holidays!

One day a few years ago I woke up and took a reality pill. That pill was a big dose of “I will never be 18 or have an 18 year old body again!” And, I’m ok with that, I am 40 after all! I’m willing to be about 15 pounds heavier than I was in high school so that I can enjoy life.
In the last year I’ve noticed that I have more and more trouble losing weight. Back in 1998, I lost 30 pounds doing Weight Watchers (WW). Until this past year, I maintained that loss. My strategy has always been to revitalize my WW diet when I gain five to seven pounds until I get back down to my “normal” weight. Normal for me is NOT skinny. I like to eat and I especially LOVE my WINE!

Now, I am seven pounds heavier than I would like to be (at least) and my attempts to shed the weight for the last eight months or so have been nothing short of frustrating and unsuccessful. To top it all off, the holidays are approaching. I’m not a masochist and I’m NOT going to diet over the holidays! It’s unrealistic for me and frankly, it kind of takes the fun out of the holidays. So, I’ve devised some strategies just to avoid gaining another five pounds!

First, if I have to bake anything, I will eat a healthy meal or snack before I start. I know I will be snacking my way through the cookie dough bowl, if I’m at all hungry. Second, any resulting baked goods will be taken away from the house or put in the freezer ASAP. I’m less tempted this way. When I’m done baking, provided it’s socially acceptable, I will indulge in a reasonable portion of goodies by applying Jennifer Moore’s  Mindful Eating techniques. I will "make time for it. “ I will “set aside ten minutes to truly experience my treat.” I will get a napkin, get a beverage, and sit down.” I will not multitask while I’m enjoying!

My second potential problem lies in parties. Again, I’m simply NOT going to a party and skipping the delicious things my host has made in the fruitless attempt to save a pound. I’ll worry about it after the first of the year. However, that said, I realize I don’t need to overdo it and there are a couple of things I can do to prep for an evening of fun. I’ll start off with a filling breakfast. This will probably include my six point (WW) breakfast burrito - one egg and one egg white, a vegetarian sausage patty, 1/8 of a cup of cheese, salsa and adobo seasoning on a two point tortilla - and a banana. I know from experience that that will keep me full for awhile. At some point during the day, for lunch or just before I go to the party, I’ll have a big salad with lots of veggies and a light salad dressing or a bowl of my Dad’s award winning chili (see recipe below), which is about two WW points per cup. Then, when I get to the party, I’ll eat, drink and be merry knowing I didn’t completely throw in the towel!

My Dad’s Chili (which always gets GREAT REVIEWS, by the way!)
2 15 oz cans dark kidney beans
2 large onions chopped (I usually cook them down before throwing them in the pot)
4 tbsp chili powder
1 tbsp salt
2 packages of Smart Ground (my dad uses ground turkey or lean ground beef)
2 28 oz cans diced tomatoes
1 15 oz can tomato sauce
1 15 oz can water

I mix it all in the crockpot and let it cook all day, but you can also put it in a large pot and cook it on the stove. This also freezes well, so I recommend doubling the recipe and eating it when you want something light and filling.

Toast The Holidays With A “Crantini”

It’s obvious to me that seasonal cranberries and the popular martini are a marriage made in cocktail heaven. The Cranberry Martini, or Crantini, makes holiday gatherings special. Between Thanksgiving and New Year’s, everyone should be toasting with them instead of the same old Bloody Marys and Appletinis.

The Cranberry Martini, a.k.a. Crantini, is a simple variation of a Cosmopolitan, which combines vodka, cranberry juice, triple sec and lime juice. The Cranberry Martini recipe leaves out the last two ingredients.

Ingredients Per Cocktail
  •  2 ounces vodka or gin 
  •  1/2 to 1 ounce vermouth (optional) 
  • 1/2 ounce cranberry liqueur or 2 ounces cranberry juice 
  •   Fresh, frozen or dried cranberries for garnish
 
Pour the first three ingredients into a cocktail shaker or mixing glass with 2 ice cubes. Shake for 10 seconds and strain into a chilled martini glass.  Float 3 cranberries for garnish.

Or you can make your own Cranberry Infused Vodka. There are lots of recipes on the world wide web, but this one is my favorite. And it doesn’t hurt that it’s super easy.

Cranberry Infused Vodka Recipe

1 pound of fresh cranberries
1 bottle Vodka (750 ml)
  • Place cranberries in food processor and pulse until coarsely chopped.  
  • Combine vodka & cranberries. Cover and let stand for 2 weeks. 
  • Strain off the solids with a fine mesh sieve. Discard solids. 
  • Transfer into sterile, airtight container and store in refrigerator.

This could make a great DIY gift if given in a fancy bottle!

Cheers To Breast Cancer Awareness

If you haven’t been following us on Twitter (@lbdclub) or Instagram (lbdclub) this month, you’ve been missing out on our Pink Drink fun to raise awareness during Breast Cancer Month!

We’ve been posting our original Little Black Dress Club cocktail concoctions throughout the month and thought we’d share a final pink toast!. A few of them are the result of a weekend long Directors retreat in Deep Creek Lake, MD. We played mixologist in the kitchen - we stocked up on juices and mixers, cleaned out the liquor cabinets, and had a blast mixing, swirling and sipping!

Here’s a taste of what we created - The Cotton Candy Cocktail, The Flower Berry Bellini and Sparkling Hope are all pink and delicious. We had an interesting time coming up with these and even more fun sipping on them while enjoying a great view of the lake!

Next time you have your girlfriends over for a GNO, pull them into your kitchen and stir up a few of these LBDC cocktails. Use it as a conversation starter to remind your friends to get a mammogram, tell a story about a loved one who battled breast cancer, or just enjoy sipping a yummy cocktail while you appreciate some girl time. Cotton Candy Cocktail
Ingredients
Raspberry vodka
Gingerale
Cranberry juice
Cotton candy

Directions
Rim glass with pink sugar or with pink cotton candy. Rim glass first with lemon to stick.
Mix equal parts liquid ingredients in martini glass.
Tear small piece of pink cotton candy and float on top until dissolved. Add more to sweeten drink.

Sparkling Hope
Ingredients
Cranberry juice
St Germaine
Sparkling wine

Directions
Fill wine glass with sparkling wine
Add equal splashes of cranberry and St Germaine.

Flower Berry Bellini
Ingredients
16 oz frozen strawberry or blackberry
⅓ cup Agave Nectar
Sparkling Wine

Directions
Puree frozen fruit
Add agave nectar
Mix until blended.
Add one Tbs puree mixture to flute glass. Fill with sparkling wine. Stir.

A Little Bit Sweet, A Little Bit Salty

The fall season is upon us! This is one of my favorite times of the year. I love the smell of the campfire, the color change of the leaves, a good smores martini and all of the great new recipes that are being shared!

Our Director from the LBDC Annapolis Chapter shared her Aunt Tammy’s awesome recipe for a fall trail mix. A little bit sweet, a little bit salty, this mix is quick and easy to prepare and is perfect for those fall hikes or camping trips!

Ingredients
Equal parts:
3 different flavors gold fish
2 different candy corns
Peanuts
Raisinets

Mix together in a large bowl and store in a gallon size ziploc bag or container.

Sharing suggestion: Buy some Halloween or Fall themed treat bags and fill each one with a portion of this sweet and salty combo. Tie them with orange ribbon and pass out to friends, neighbors or coworkers!

Less Sugar, More FUN!

Don’t want to contribute to your neighbor’s kid’s tooth decay this year? Not the dentist in town who’s going to profit from all the Halloween candy that’s getting passed out? I don’t and I’m not, so I thought it would be fun to see what candy alternatives I could find. Frankly, it’s easy to spend $20 or $30 on candy for the kids, and I wondered what I could find in a comparable price range. I thought it would be fun to build a grab bag (or grab pumpkin) of fun items. A visit to Dollar Tree yielded the following options at a buck each:
  • Stickers (pack of 30)
  • Halloween pencils (pack of 12)
  • Halloween erasers (pack of 12)
  • Halloween straws (pack of 5)
  • Glow bracelets (pack of 15)
  • Glow finger extensions (pack of 4  - not sure what you do with a finger extension…)
  • Grow capsules (pack of 15)
  • Bubbles (3 bottles)
  • Play Dough (pack of 8 or a pack of 4 of larger containers)
  • Glow Balloons, Flying Discs, and Tops (packs of 4)
Moving on down the road to Walmart, I found water balloons and henna tattoos. Hobby Lobby has Loopy Straws  (8 for $1.59), a 24 pack of bubbles for $3 and light up balloons .The light up balloons are a bit pricy, but I must confess, I wanted one for myself! Oriental Trading also had a ton of great Halloween goodies, like pencils and erasers, in bulk at reasonable prices.

The upside (or downside, depending on your point of view), is that at the end of Halloween, I won’t be left with a bunch of candy in the house that will end up on my bottom line. On the other hand, figuring out what to do with a bunch of leftover toys could be a challenge….

For the kids I know well, I’m throwing in a bag of the Original Chex Mix. Let’s face it, the homemade stuff is so much better than the bags in the snack aisle and since it’s made with cereal, I can convince myself it’s healthy!

Shay, our Social Media Director suggested Rice Krispie treats. Yes, there’s some sugar in there, but I’m going to make a case for these since they are made with fortified cereal, too. And, she had the great idea of adding some chocolate chips and red and yellow food coloring for the black and orange color effect. I think the kids would get a kick out of that.

Jen - our co-founder - says, “If you are making a homemade treat, be sure to put your name on it.” At least if the moms in your neighborhood have a question about it, they can give you a quick call to confirm, which will give you a chance to catch up.

A Little Black Prada Dress


How many women do you know whose favorite movie is “The Devil Wears Prada”? Correct answer: All of them!

Did you know that Patricia Field, the costume designer, also did the wardrobe for “Sex and the City”, the series and the movie?

With the fall season upon us, why not grab all your girlfriends and get together for a DWP themed GNO? Light a fire, pour some wine and put The Devil Wears Prada in the Blu-ray!

While watching the movie, whip up a Grilled (Jarlsberg) Cheese Sandwich and test your knowledge to see who the biggest fan is! Have prizes such as a copy of the DVD to award to the biggest fan. Draw names to try and answer trivia questions, or just take turns sharing your favorite scenes, fashion accessories or characters.

The Little Black Dress Club has incorporated The Devil Wears Prada into several of their events and always with much success! Here are a few facts, hints, goofs and trivia questions to help get you started with your DIY DWP party!

We found this great recipe from Simply Gourmet that someone had pinned to their appetizer board. With football season here, this would be a great recipe to fix on a Sunday afternoon or for a tailgating party!
